We love visiting old fashioned candy stores.  Without a doubt, the kid at heart in us also LOVES Oh Henry bars.

There’s just something amazing and wonderful about chocolate and peanut butter combinations, especially when nougat, caramel and/or something crispy are added to the mix.  

Oh Henry! bars fit that bill really well.  We’ve always had a soft spot for their chewy, crispy crunch and that smooth peanut butter and chocolate topping.

While perusing Pinterest  for something sweet to make, we came across this knock-off recipe for Oh Henry! bars.  We were super excited to give it a try.  So excited, in fact, that we didn’t read anything past the ingredient list.

Always read the ingredients

BIG MISTAKE.  Learn from our error and ALWAYS read a recipe completely before you dive into it for the first time.  Even 30 seconds paying attention to the ingredient list, we would have learned that the recipe we found wouldn’t even remotely resemble a traditional Oh Henry! bar.

The end result was still absolutely yummi, but more of a wannabe Oh Henry! bar.

How would we know that by reading an ingredient list?  There’s no caramel to be found in this recipe, peanuts were missing from the action.  In fact, the recipe didn’t even call for crunchy peanut butter, but we kind of lucked out on that, since that’s all we had available.  

So there you have it. ????

Almost Oh Henry! Bars 101

This layered amazingness recipe is actually quite simple, on top of being flavorful!

  • What you’ll need: Rolled oats, white sugar, brown sugar, unsalted butter, semi sweet chocolate and crunchy peanut butter make these magical bars.
  • A little history: There are a few origin stories about Oh Henry! Bars. The first being that the candy bar was named after the creator, Tom Henry, and that he sold the rights in 1920. The more interesting version is a tale of a young man who would visit one of the candy shops and flirt with the ladies, who would respond, “Oh, Henry!” The story is sweet, but no one really knows for sure. 
  • How to store: If you have any of these left when all is said and done, store in an airtight container in the refrigerator. They will last a decent length of time in the fridge (if you can manage not to eat them all within 24 hours, that is.)

Chocolate Peanut Butter Oatmeal Bars {Wannabe Oh Henry! Bars}

Ingredients
  

  • 4 cups rolled oats (not instant)
  • ½ cup white sugar
  • 1 cup light brown sugar
  • 1 cup unsalted butter melted
  • 6 ounces semi sweet chocolate chips
  • 1 cup crunchy peanut butter

Instructions
 

  • Heat oven to 350 degrees F (325 if using convection oven)
  • Lightly grease a 13″ x 9″ baking pan
  • In a medium bowl, mix oats and both sugars. Pour melted butter over and mix well to combine.
  • Use back of wooden spoon to press mixture into bottom of pan
  • Bake in oven for 18 minutes (don’t overbake)
  • Place pan on cooling rack and cool completely.
  • In microwave safe bowl, melt chocolate chips and peanut butter together. Spread over cooled oat mixture and chill in refrigerator until set.
  • Cut into squares for serving.
