I don't know how you've been managing, but for me, it's been a long week, and I'm ready to have a little fun.

Tomorrow, as you might have heard, is the end of the Mayan calendar.  That's right lovelies... THE APOCALYPSE!

One of the things that I love about Katrin is her passion for using local foods.  I'm all about keeping small businesses thriving, so I love that she goes to the farmers market and uses those great resources in her cooking and baking.

SPICY YELLOW TOMATO & PINEAPPLE SALSA

WHAT'S NEEDED
  • 2-3 Heirloom (yellow) tomatoes, seeded and medium diced
  • 1 cup fresh pineapple, diced
  • 3 Tablespoons fresh pineapple juice
  • 2/3 cup red onion, finely diced
  • 1 fresh jalapeño, Serrano, or Habanero pepper, seeded and minced
  • 1/4 cup fresh basil leaves, finely chopped
  • Kosher salt and freshly-ground black pepper to taste

HOW TO MAKE IT
  1. Combine all ingredients except salt, pepper, and basil together in a non-reactive bowl and refrigerate 2 hours, stirring occasionally to allow the flavors to combine. Season to taste with sea salt and freshly ground black pepper. Top with basil and keep chilled until ready to serve.

Changes at the Crossroads

Just 8 short months ago, my life was forever changed, when my sweet mom went home to be with her King in Heaven.  Some days I feel like she's been gone forever.  Others, it feels like time has stood still and it was just yesterday that those of us who loved her gathered together to say our goodbyes to one of the world's greatest women.  I miss her in ways I never imagined I would.  I'm grateful that she's no longer in pain, but there's crashing pain in my heart at the longing I have to see her smile and feel her soft skin touch my lips as I kiss her cheek....

Three months after mom's passing, as I was in the midst of my final semester of culinary school, my life plans were put on hold and my dreams of working as a chef were shattered into a million tiny pieces.  It was UGLY.  I suffered a complete physical and mental breakdown.  I had dismissed the warning signs, and I was anything but prepared for the internal fight that my body would endure.  I'm still fighting to regain my health today...

As spring kicks into high gear, the sights and sounds at every turn remind me of "Granny" and her love of nature's beauty.  The birds chirping, welcoming in each new day.... the Forsythia in bloom (her favorite), and the cool breeze running through the wind chimes on the back patio.  Mom is everywhere...yet nowhere.

Through this experience, I've come to accept (and even appreciate!) that life doesn't always move according to my plans and time table, but it does move forward.  I've learned that there's excitement to be found in new experiences, and that I have no need to fear the unknown.  It's unknown to me, but not to my Maker.  He knows and is aware of every twist and turn that my life will take.  However, it's up to me to open the doors of opportunity to see what's hiding behind them, and it's my responsibility to take a step through the doorway to experience what's in store for me.  Even if what's there looks scary and unknown, I'll have faith that it's all in His plan for my life.

As I continue to heal physically and emotionally, I've learned to do what I can, when I can.  Baby steps for the win!

On the days when my endurance is at its best, I take advantage of the opportunity to cook and bake.  It's therapeutic, and I feel accomplished and full of happiness seeing the smiles that my creations bring to the faces of those who partake of them.  Almost always, the following day brings physical exhaustion (like today).  I'm barely able to get up from my bed, so I take advantage of the opportunity to rest, have devotional time with God, to journal my thoughts and prayers,  to create and adapt recipes, and to write blog posts like this one.

For me, consumption of food is a necessity for keeping my body fueled, but cooking, serving, and helping others learn about food is my life's blood...it keeps my heart in working order.  Without the incorporation of those things in my life, I feel that I might wither away and be blown over like a dandelion in the breeze.

I don't want that to happen, so I'm hopeful that you'll continue to be here with me on this journey.  If I could have anything I wanted for this blog, it would be for you to find a friend or two (or three!) that don't know about this site and to invite them over... share the link with them.  Please help me to create happiness in your life and the lives of others!

Here are a few changes that I'm going to incorporate into this site moving forward:

FRUGAL FEEDING - Beginning on April 1st, I'm going to begin posting recipes that can be prepared for $1.00 (or less!) per person.  They'll cover all of the culinary bases of breakfast, lunch, snacks, dinner, and desserts.  Because I'd love for you to cook along with me, I'll be posting the ingredients you'll need for that week's dishes every Sunday.  If there are any great grocery coupons for the items you'll need, I'll post links to them as well.  You're certainly under no obligation to click the links and print them, but I would greatly appreciate you doing so.  I receive a VERY small compensation when coupons are printed and when you sign up for offers that I advertise here on the site.  I'm not the type to beg for handouts and I'm certainly not one to sit on a pity pot and feel sorry for myself (or try to convince others to feel sorry for me), but right now, I don't have the ability to work, so every little bit of income helps me.

Shrimp Scampi with Spaghetti Squash

Hey there!  I'm SO glad that you stopped by for a visit.  I've got a delicious recipe to share with you today, so let's skip the chitter chatter and get right down to the good stuff, shall we?  If a picture is worth a thousand words, feat your tummy on this, my friend...

During my first-ever trip to Trader Joe's 2 weeks ago, I picked up some incredibly tasty treats.  One of those treats was a bag of  Argentinean shrimp like this one.  YUMMILICIOUS!

Oh, before I go on, I know that there have been some not-so-nice comments made about TJ's by the folks at Greenpeace.  Apparently, the store hasn't been using sustainable methods to acquire their seafood, but I'm happy to report that all of that it seems that things will be changing this year!  See this article for more information.

Because my grocery budget doesn't usually allow me to splurge on delicious seafood, I wanted to make sure that I made a dish that would help the shrimp to be the star of the show.  There are LOTS of spices that can do just that, but I am a huge fan of smart, simple, savory solutions (say THAT 5 times fast!), so garlic shrimp scampi seemed like the perfect choice to me.  It got all the easier once I realized that I could use Lia Marie's Garlic Spread as a substitute for traditional butter.  I have to tell you, that simple spread kicks the scampi up to new levels of deliciousness.  You REALLY need to try it sometime!  For more information on where it can be found AND for a money-saving coupon, CLICK HERE

To make the dish a little healthier, I used spaghetti squash instead of traditional pasta.  By doing so, I was able to save over 200 calories per serving!  Another plus is that spaghetti squash is a home run with most kids.  You're getting veggies into their system and they're usually hard pressed to notice a difference.  SCORE ONE FOR THE PARENTS!  :)

To prepare the squash so that it comes out in long, spaghetti-like strands, cut it in half across the middle, then scoop out the seeds and pulp.

Lay the pieces flesh side down into a microwave-safe casserole dish, and add about 1/8 cup of water to the dish.  Cover the dish with plastic wrap, leaving a little space open for venting purposes.

Microwave on high for 9-11 minutes, or until the skin of the squash is tender.

While the squash is baking, prepare your scampi:

Serving Size: 8 shrimp and 2 cups of spaghetti squash

Shrimp Scampi with Spaghetti Squash

This shrimp scampi is healthy, quick, and incredibly delicious. It uses less than 5 ingredients and cooks up in less than 15 minutes.

WHAT YOU\'LL NEED

  • 8 ounces (about 16 pieces) precooked shrimp (If you're using frozen shrimp, thaw, drain them well, and remove the tails)
  • 3 Tablespoons Lia Marie's Original Garlic Spread
  • 1.5 teaspoons crushed red pepper flakes
  • salt and freshly ground black pepper, to taste
  • 4 cups (approximately 2 pounds) spaghetti squash, steamed or baked

HOW TO MAKE IT

In a large skillet over medium heat, melt the garlic spread.

Add the shrimp and crushed red pepper and saute 3-4 minutes, until the shrimp is heated through

Toss the shrimp with the cooked spaghetti squash and serve on a bed of steamed spinach or french style green beans

CAREFULLY remove the plastic wrap, being careful not to let the steam hit you in the face.  The squash will be VERY hot!  Use an oven mitt or pot holder to hold the squash and use a fork to pull the flesh away from the skin. Place into a large bowl and toss with the scampi. If desired, sprinkle with a little fresh parsley and grated Parmesan cheese. Serve & enjoy!

Guess what today is?!  Come on....guess!  OK yes, it's 4 days until my birthday, but that's not newsworthy.  What IS newsworthy, however, is that today is national popcorn day AND national peanut brittle day!  Three cheers for confectionary creations that crack your teeth!

Hey, dentists have families to support too, so I may as well do my part in keeping food on their table by devouring a pan  couple of pieces of today's confectionery creation... POPCORN PEANUT BRITTLE!

This stuff could easily become a new gateway drug. It's the perfect combination of salty and sweet, and it's so incredibly easy to make, you won't believe your eyes.  Most people shy away from making candy and confections because they don't want to mess with candy thermometers, but I'm here to be your confection cherub.... this is a recipe that is made entirely with the use of a MICROWAVE!  See, those little rays are good for more than warming up a cup of coffee!  Of course, if you're a member of PETF (people for the ethical treatment of food), you are certainly welcome to pull out a pan of Jiffy Pop and a candy thermometer and go to town.  No matter how you make this, it's absolutely yummilicious!

Popcorn Peanut Brittle

YIELD: About 1 pound

 

Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
Buy 1 Karo® Syrup, Save 40¢.
Expires 1/31/2012.
One time use only.

  • 1/8 teaspoon salt
  • 1 cup dry-roasted or shelled raw peanuts
Save $1.00 when you buy TWO (2) Fisher® Snack Peanut items of any variety, 14 oz. or larger.

  • 2 tablespoons butter
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1 cup popped popcorn

Preparation

Combine first 3 ingredients in a large (4-6 cup capacity) glass bowl.

Microwave on HIGH for 5 minutes, add peanuts, and microwave 2 more minutes with a 1,000-watt microwave. (If your microwave is less than 1,000-watt, microwave an additional 4 minutes)  CAUTION!  The sugar mixture will be VERY hot (beyond the boiling point), so use care when removing it from the microwave

CAREFULLY stir in the remaining ingredients (the mixture will bubble and may splatter when you stir in the ingredients, so PLEASE BE CAREFUL!

Pour into a buttered 15- x 10-inch jellyroll pan (quarter sheet cake pan); shake pan or use a heat resistant silicone spatula to spread the mixture thinly and evenly in the pan.

Cool until firm, then break into pieces. Store in an airtight container.
