Happy Saturday! I hope you're enjoying your weekend and giving yourself a little TLC. My body's been through the exercise wringer this week, so my joints and muscles have been letting me know that they're alive and kickin'. I thought about taking a nice soak in the bathtub, but I was afraid if I got in, I might not be able to get myself out. Lord help the poor soul who has to drag my naked body out of there...Even a glimpse of that horror would require a few therapy sessions for one to recover fully. Good gravy...it's time to change the subject!

If you're still looking for a gift for the special mom in your life and you're thinking you'd like to go the route of a handmade gift, you've got two options. You can put your craft enabled self into create mode and have at it....OR you can do what I did. You can unashamedly admit that you suck at anything that requires hand-eye coordination, fire up your nearest Internet browser, and head on over to Etsy. The Etsy website is chock full of crafty, hand made items, sold by the people who crafted them!  You can find everything from cupcake wrappers to clothing and bedding to baby toys!  I love love love Etsy!

The first time I visited the site, I was on the hunt for a birthday gift for a special friend of mine.  Since she loves baking, I figured I'd do a "quick" search for a cute set of potholders and matching tea towels or something.  Little did I know that there would be over 30 different virtual shops on Etsy to choose those items from!  That visit time sucked an hour from my day and I STILL hadn't found "the perfect" set.  Hey, don't roll your eyes at me like that!  How could I possibly have determined what was perfect unless I looked at ALL of my options first?  Sheesh.

So therein began my love for all things Etsy made.  A few weeks back, I was trying to find a great gift to give away during my celebration of  7,000 Facebook fans, when I came across a wonderful Etsy shop named "Around Town Girl".  Reading the shop's "about" section made me sort of tingly and giddy.  It says, " Items in this store help to promote joy & peace through self-nurture or self-love activities. Things like soaps, bath bombs, and dream pillows are all pampering and self-nurturing. With the right mindset, using such simple beautiful products can send messages of love to yourself. In order to give love from a full cup you must first fill your own cup."  I just KNEW I'd find a great giveaway gift there...and indeed, I did!  I wanted to give away an item that can be used by either gender and I wanted it to be easy to ship.  One simple click through the items in the shop revealed one of the most adorable mug cozies I've ever seen.

Doesn't it just scream to be wrapped around your favorite coffee mug?  So stinkin' cute!  I had an email conversation with the owner of the shop, Shileen, and after talking options and colors, I special ordered a couple of cozies for myself and a couple to give away to you!  I didn't receive these free, nor did Shileen compensate me to say all of these nice things about her shop.  As I've told you before, if I find something I like, I'm gonna shout about it from the roof tops.  So I dug deep into my own pockets to pay for these giveaway items because I wouldn't be here if it were't for the support of you all.  A giveaway is the very least I can do to show my appreciation and admiration to you for it!  I only wish I had the funds to give something to each and every one of you!

The purple cozy on the left is an exact replica of the one shown on the mug in the first photo.  It's intended for mugs with handles.  The sage green cozy on the right is a sleeve and is intended for mugs or cups without handles.  Don't let your brain be tricked into thinking that these cozies are only to keep hot beverages hot, though!  I use my cozy to help keep my hands from slipping off of my glassware when it sweats.  I love it!  The cozies are made from acrylic yarn, so if they get dirty, just pop them into the wash and they'll come out looking good as new.

If you've never heard of Jenny Flake or visited her incredible website, Picky Palate, you truly need to pay a visit soon.  Jenny's personality is like a great big dose of sunshine on a cloudy day.  Her recipes are easy to make and incredibly enjoyable to eat, too.  She specializes in feeding picky eaters, so you know that the food she makes is down home simple pleasure.  Oh, and her desserts?  AHH-mazing!  The mere sight of some of her desserts is enough to make me pop the elastic on my stretchy pants.  The cookies pictured above were made by me, but inspired by THIS RECIPE of Jenny's.  YOWZA!  Can you believe the size of those babies?!

Jenny's been in national cooking competitions and she's even appeared on the Food Network a few times.  I'm in awe of her talent!  When Jenny heard that I recently celebrated my 1-year blogiversary and achieved 5,000 fans on my Facebook page, she was super excited and happy for me.  She even generously donated today's giveaway prizes...3 copies of her brand new cookbook!  Yes, Jenny has a cookbook... It was released this past October, and it's a HOT HOT HOT seller!

You can buy copies of the book at quite a few retailers, including Amazon, Barnes and Noble, Deseret Book, and Books a Million.  It would make a fantastic gift for anyone who enjoys cooking or baking.  But like I said, Jenny is giving three of you lucky readers your very own copy absolutely free.  Cool, huh?  I'll give the low down on the giveaway in a minute, but first I want to give you the recipe for the chocolate peppermint patty cookies!  Like I said earlier, Jenny's recipe for Oreo stuffed chocolate chip cookies inspired me to create my own stuffed cookie.  I'm crazy for peppermint patties and I've been craving some double chocolate cookies, so it only made sense to stuff one inside of the other :)  Peppermint, chocolate, gooey goodness... go ahead... drool on, my friend!

Chocolate Peppermint Patty Cookies

WHAT'S NEEDED
  • 4 ounces bittersweet chocolate
  • 1/2 cup (1 stick) butter
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup (130g) all-purpose flour
  • 1/2 cup Dutch-process cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup (8 ounces) bittersweet chocolate chunks or chips
  • 12 peppermint patty candies, unwrapped

HOW TO MAKE IT
  1. Heat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats. Unwrap 12 peppermint patties and set aside.
  2. In a medium bowl, whisk together flour, cocoa, baking soda and salt. Set aside.
  3. In a small saucepan over low heat, melt butter and 4 ounces bittersweet chocolate together, stirring until combined. Remove from heat and add vanilla extract.
  4. In the bowl of a mixer, combine eggs and sugar and beat at medium speed until light and fluffy, about 3 minutes. Reduce speed to low and beat in chocolate mixture until well combined.
  5. Add flour and stir until just combined. Fold in chocolate chips or chunks.
  6. Using a small cookie scoop, drop tablespoon portions 2-inches apart onto prepared baking sheet.
  7. Bake for 8-9 minutes. Cookies should be slightly under baked so the interior stays chewy and soft. Remove pan from oven and transfer to cooling rack. Let cookies sit for one minute, then carefully cover half of the baked cookies with peppermint patties. Use a spatula to pick up a plain cookie and place it on top of one that has candy on it. Repeat until all cookies have been sandwiched together with a peppermint in the center.

God can and does perform miracles every day.  I've watched it happen in the lives of friends and family members, and I've experienced personally in this old body of mine as well.  FIVE times in my life, I've had doctors tell me that they don't understand how I lived through a particular ordeal.  In their opinion, I should have died, and they have no explanation as to why I didn't.  Those doctors were shocked that I lived, but I wasn't quite so shocked.  Rather, I was full of awe, wonder, and overwhelming joy at the power and depth of love of God.  He's strong and wise enough to see us around...or through anything, even the most difficult of obstacles.  His love NEVER fails!  I think He allows pain, suffering, and sadness because it draws us closer to Him.  He didn't create us to rely on our own selves to live.  He created us because he wanted a relationship with us!  If we don't need Him or want Him in our life, then there's no relationship, and that saddens Him.  So sometimes, He takes what we might consider to be drastic measures to bring us to our knees and ask for His help.  It's at THAT moment that I've seen the mighty miracles occur!  I'm not going to push my relationship with God down your throat.  I just wanted you to know that even when you don't feel loved, you are.  Even you feel alone, you're not.  Even when you're broken hearted, penniless, and feeling hopeless, there's someone who wants to help you.  Just ask Him for that help.  Even if you don't currently believe in the God of my life, I challenge you to give Him a try.  After all, what could it hurt to try?  If you don't have any expectations, you won't be disappointed if nothing changes.  However, if you don't expect a miracle and you get one... THEN how great would you feel?  :)

Hip hip hooray...it's National Pretzel Day!

OK, fine.  I realize that these quirky, crazy food days were most likely developed by genius account managers in the marketing departments of food brands that were on the financial outs.  Working their way DOWN the food chain was NOT their intended goal, so they decided to create a national holiday celebrating the love of _________, thereby giving us consumers a great opportunity to purchase said food.

I decided to let someone ELSE enjoy National Lima Bean Recognition Day, but today, I'm all about celebrating.  Heck, who doesn't love a good pretzel now and then?!

Personally, I'm a bit of a fence jumper here.

The Sprouted Bakehouse – Review

If you've been a reader of this blog for a while, you know that I proclaimed 2012 to be the year of making healthier eating choices for myself.

ODE TO A DIET: Eating healthier does NOT mean eating bitter greens and mushy beans, but if all goes well, it WILL mean fitting back into my SKINNY JEANS!

I still believe firmly in eating all things in moderation.  FAIR WARNING: If someone tells me that I have to give up eating bacon or chocolate, things could get brutally violent around here.  I'll be throwing hissy fits and shoveling spoonfuls of Nutella into my mouth to comfort myself.  Ugly, I tell ya.  Don't go there.

Lucky for me, I was recently given the opportunity to learn just how delicious making healthy food choices can be.  The great folks over at Cybros - The Sprouted Bakehouse sent me a wonderful selection of their sprouted grain products to try.  I've got to admit that just the word "sprouted" had me thinking that my taste buds might be in for some gritty, dried out sadness.  WOW, was I ever wrong!  Their products are WONDERFUL!

 

So you may be asking yourself WHAT THE HECK ARE SPROUTED GRAINS?  I'm so glad you asked!  :)

The Science of Sprouting

Whole grains contain all three parts of the grain: the germ, endosperm and bran. In traditional flour-based breads, these whole grains get broken down when processed into mill flour. Cybros Sprouted Grains represent whole grains in their purest form. Grinding their grains into dough bypasses the processing that can extract nutrients and/or add other starches with negative nutritional attributes.  The result is healthy, delicious baked goods!

How Do They Do It?

The process begins with whole grains of red wheat berries, oat groats, rye berries, barley, corn, rice and millet. These grains are biologically intact and could be grown into new plants. They are soaked in water, shifting from the dormant state to an active (or sprouting) state.

Once the grains have sprouted – or just barely begun to grow into plants – they are pressed through a special sieve and mixed directly into dough. Because they don't pass through the milling and refining process of flour, sprouted grain breads contain far less flour than traditional breads. Nutritionists tell us that sprouting the grains increases the vitamin content of seeds, some as much as 500%!  Sprouting also begins transforming the starches into simple sugars, making them more digestible, and increasing vitamin and mineral assimilation. In addition to that, All Cybros Breads are certified by the kosher supervisors of Wisconsin.

I was given the opportunity to try a loaf of the sprouted 7-grain bread, one of the sprouted grain baguettes, a package of dinner rolls, and a loaf of their raisin bread.  They  all looked SO good, I was like a kid in a candy store trying to figure out what to try first.

Since I'm currently following the Weight Watchers eating plan, I decided the first thing to do was figure out how many points the items were worth.  When I learned that the 7-grain bread is only 1 point per slice, I nearly fell off of my chair!  (Most of the traditional 100% whole wheat breads are 2-3 points per slice).  That's because of the high fiber content in the bread.  I instantly toasted up a slice and spread a teaspoon of peanut butter onto it, then topped it off with some sliced banana.  HELLO LOVER!

The next day, I decided to try making a turkey roll in my slow cooker.  It called for 4 slices of white bread, torn into small pieces, so I used the sprouted 7-grain bread instead.  The result was a moist, delicious easy to prepare meal that was only 4 Weight Watchers points per serving!  Here's the recipe (adapted from Weight Watchers)

Slow Cooker Turkey Roll

WHAT YOU\'LL NEED

  • Cooking spray
  • 1 pound extra lean ground turkey or beef
  • 1 cup finely chopped onion (1 small onion)
  • 1/2 cup finely chopped green pepper
  • 3 slices Cybros sprouted 7-grain bread, torn into small pieces
  • 2 tsp prepared yellow mustard
  • 1 Tablespoon fresh sage, finely chopped
  • 1 tsp dried parsley flakes
  • 1 (8 oz) can tomato sauce or 3/4 cup low sugar catsup
  • 1/2 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper

HOW TO MAKE IT

Spray slow cooker with cooking spray. Place a steamer basket into the slow cooker for the turkey roll to rest on while cooking. This will allow the grease to drain as the roll cooks.

In a large bowl, combine meat, onion, green pepper, bread pieces, mustard, and 1/2 of the tomato sauce or catsup.

Mix well to combine and form into a roll. Place in prepared crockpot.

Stir sage, salt, pepper, and parsley flakes into remaining 1/2 of the sauce or catsup and spoon mixture evenly over the roll.

Cover and cook on LOW for 6 to 8 hours. Divide into 8 servings.
