BREAKING NEWS: Last week, right after I posted my Slow Cooker Italian Chicken recipe for the Secret Recipe Club, I learned about an orphan that needed a home, so I rescued her. I’m serious! Her name is Nichole. She’s really sweet and super talented. She even knows how to cook and bake! I’m completely smitten with her.

Nichole’s not the kind of orphan you’re probably thinking of, though.

She doesn’t need a new place to live, because she has a home of her own in Maryland. She lives there with her husband, Tom, and a couple of adorable fur babies. Nichole is the blogger behind Cookaholic Wife, and she’s in the Secret Recipe Club with me. For reasons unknown, the blogger who was supposed to make a recipe from her blog wasn’t able to do so. That’s why she was deemed an orphan, and that’s why I adopted her! I’m going to show you how to make her recipe for cheesy bacon jalapeno bites.

In addition to her love for cooking, Nichole is a beach lover. So much of one that she sports a killer tattoo on her left ankle. Look at this!

I knew I needed to make a quick and easy recipe of Nichole’s, but I had a hard time choosing what to make. Her recipe for pumpkin cheesecake  looks amazing, and so does her bacon lover’s mac & cheese.   I’ll definitely be going back to grab those recipes to make soon!

My priority: Find a recipe using ingredients already in my pantry.  Thanks to bacon month, I have plenty of bacon in the fridge.  As I scrolled through Nichole’s appetizer recipes, I saw her cheesy bacon jalapeno bites recipe. I have some organic jalapenos from a recent organic produce delivery, so  BINGO!

My mind set on making cheesy bacon jalapeno bites, I press on.

Bec’s Recipe Tip:

For the safety of your eyes and mucus membranes, take extreme caution when slicing and seeding jalapeno peppers!

If you have latex or cooking gloves, by all means, put them on before you start the pepper cleaning process.  Otherwise, avoid touching your eyes after you’ve handled the peppers, at least until you’ve thoroughly washed your hands.  If you accidentally touch your eyes, they’ll feel like they’re being stabbed by a scalding hot kitchen knife. That is no fun at all.

Cheesy Bacon Jalapeno Bites

Prep Time 5 min Cook Time 20 min Yields 10

Jalapeno peppers are stuffed with softened cheese spread, and wrapped in bacon, then baked until they're crispy and oozing with melted cheese. Recipe adapted from Cookaholic Wife who adapted it from Sweet Beginnings.

  • 5 jalapeno peppers
  • 2 oz. cream cheese or cheese spread (I used Boursin roasted tomato), slightly softened
  • 5 slices bacon, cut in half vertically

  1. Heat the oven to 400. Line a rimmed baking sheet with aluminum foil.
  2. Cut the top of the jalapeno peppers off, then slice each pepper in half; using caution (wear protective gloves if you have them), remove and discard the seeds and inner membranes.
  3. Use a spoon or your fingers to evenly distribute the softened cheese into each jalapeno piece.
  4. Wrap each jalapeno piece with 1/2 slice of bacon and if necessary, secure with a toothpick.
  5. Place the jalapenos onto the baking sheet and bake for 20-25 minutes, or until the bacon is cooked and the cheese is bubbling.

  • Rebekah September 9, 2014 (9:07 am)

Thanks for rescuing an orphan! These look so awesome. My husband would go crazy for them, I’m sure.
I’m slightly paranoid about handling peppers – even my fingers burn like crazy for hours if I touch the seeds/innards of a jalapeno. Glad my eyes have never experienced that.

    • Chef Becca September 9, 2014 (10:13 am)

I was happy to help, Rebekah… especially since it gave me the chance to indulge in these appetizers! 🙂

  • colleen September 9, 2014 (8:55 am)

Whoa! This look like a fabulous (and easy) way to get bacon into some tasty jalapeno poppers. Great choice for football season, too.

  • David September 9, 2014 (7:04 am)

You may as well rename this as “Perfect appetizer to eat while watching football”! Seriously, I just want to jump right into a pile of these stuffed jalapenos! (But I completely agree with you re: cutting jalapenos…I’ve had more than one run in with jalapenos and eye-rubbing…even hours later!)

    • Chef Becca September 9, 2014 (8:22 am)

Perfect title for these, Dave! Oh, and just like David Lee Roth into a gigantic pile of fall leaves, right? Let’s jump! 🙂

  • Emily September 8, 2014 (7:59 pm)

These look delicious Becca, great choice!

  • Julie September 8, 2014 (7:28 pm)

Perfect for a Sunday afternoon football game. Visiting from SRC B!

  • SeattleDee September 8, 2014 (3:05 pm)

These little flavor bombs are calling my name – no, actually they’re jumping up and down, waving and shouting “eat me right now!”

    • Chef Becca September 8, 2014 (3:24 pm)

I just got a fun giggle out of your use of the phrase “flavor bombs”! I guess you’re right, though.. that’s exactly what they are! Thanks for coming by 🙂

  • Jean September 8, 2014 (12:57 pm)

I’ve been looking for jalepeno recipes. Thanks.

  • Nichole September 8, 2014 (7:15 am)

You’re too sweet! Thank you for the kind words and awesome choice! In my book you can never, never go wrong with bacon, jalapenos and cheese. 🙂

    • Chef Becca September 8, 2014 (8:21 am)

You’re very welcome… and you’re absolutely correct. There is now, nor will there ever be a single thing wrong with bacon or cheese! The jalapenos are just a transportation device 😉

  • Sweet as Sugar Cookies September 8, 2014 (1:01 am)

Holy smokes! Those look dangerously addicting. I wouldn’t be able to resist eating one (or five). Thanks so much for helping out and rescuing an orphan!

    • Chef Becca September 8, 2014 (7:16 am)

Indeed, they are addictive! There’s a good reason that I only had 6 available to take a photo of! 😉
