Low Carb Sugar-Free Chocolate Pudding Recipe

I have personal experience to prove that if you’re craving something sweet and you eat a chocolate peanut butter snack bar parfait, it’ll kick your snack craving straight to the curb! Why? Because I used homemade sugar-free chocolate pudding, and added in chopped up pieces of fudgy, chewy, peanut butter loaded protein bars. So instead of having a sugar-loaded snack that would spike my blood sugar and leave me feeling satisfied for 15 minutes, I ate something delicious and nutritious, and it kept my sugary snack cravings at bay for 5 hours. Now that’s what I call snacking success!

If you’ve ever perused (I love that word!) the snack bar or nutrition bar aisles of your favorite store, you know that there are more snack and protein bars on the shelves than ever before. I think that’s because everyone is constantly searching for the perfect healthy snack or meal replacement, and it seems that everyone wants those bars on the go. It’s no secret that having protein in our bodies is a good thing, especially in the morning, but my biggest struggle has been finding a way to keep my cravings for carbs from getting out of control.

I just complained about mentioned that to my personal trainer, Sean last week, when I started a 16 week Body Challenge at Push Fitness – Appleton. Sean leads most of the group fitness classes that I’ll be going to. He’s also the one who reviews my weekly food logs. I told him right off the bat that my biggest food cravings come in the way of breads, pastas, chips, and of course, chocolate. He told me that having protein in my body will be important to helping me to battle my urges for sugar.

I found these Life Choice protein bars in the cereal bar aisle of Walmart. They were sort of hiding down near the bottom shelf. I’ve found that most of the truly good stuff is either down near the bottom or high up on the top shelf, just out of my eye’s view. Why the heck is that, anyway?  It’s like searching for buried treasure with a metal detector…you have to dig around a lot of junk to find the gold. ๐Ÿ™‚

I have a basket of the protein bars sitting on my counter to curb my snack cravings, especially for when I’m on the go. I tuck one into my purse so I don’t have to worry about any snack attack thoughts that come into my head when I’m passing by the frozen yogurt shop or when I’m standing in line next to the candy bars at the grocery store checkout.

I’m serious, gang… the double chocolate bar tastes so much like a dark chocolate candy bar, it’s almost unreal. I used the peanut butter bars to make up the chocolate peanut butter snack bar parfaits, but next time I make them, I’ll use the chocolate mint variety. Sugar Free Chocolate Pudding

This creamy chocolate dessert is sugar free, gluten free, and oh so delicious! It's so yummi good, only you'll know that it's healthier than it's full sugar counterpart!

Ingredients
  

  • 18 ounces (2 1/4 cups) unsweetened vanilla almond milk (can also use regular milk)
  • 1 cup sugar substitute (I use Erythritol) divided
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon corn starch sifted
  • 1 small pinch kosher or sea salt
  • 1 large egg + 2 large egg yolks
  • 5 ounces good quality bittersweet chocolate broken into small pieces
  • 1 ounce (2 tablespoons) unsalted butter
  • 2 teaspoons vanilla extract

Instructions
 

  • Scald 16 ounces (2 cups) milk and half of the sugar substitute in a saucepan over medium high heat. (Scalding is cooking it until just before it comes to a boil).
  • Combine remaining sugar substitute with cocoa powder, corn starch, and salt in a medium bowl. Whisk in remaining 1/4 cup milk to form a smooth paste.
  • Whisk 1/4 cup of the warm milk mixture into the cocoa paste until well blended. Return to the sauce pan and whisk well to combine. Bring to a simmer over medium heat and cook until fairly thick, about 5 minutes, whisking every minute or so.
  • Meanwhile, whisk eggs and yolks in a small bowl until well blended. Very slowly drizzle about a cup of the warm chocolate mixture into the eggs, whisking continuously as you drizzle, until well combined, then slowly stir this mixture back into the pot, whisking until it thickens, no more than 3 minutes. Do not allow it to boil.
  • Remove from the heat, add vanilla extract, chocolate pieces, and butter, and whisk until smooth.
  • Pour pudding into 4 parfait glasses or custard cups.
  • Refrigerate until the pudding is set.
