Quick and Easy Soup Recipes for a Busy Life

Before I had kids, I spent a lot of time cooking. I loved being in the kitchen, and making dinner could easily take over an hour each day. Back then, I thought that people who complained about not having time to cook weren’t making time for it or just didn’t love it enough. I was young and thought I knew everything. Clearly.

And then I had kids, and soon after that, I started my own business.

Suddenly, I didn’t have time to make those fancy dinners.

And then I finally understood.

It’s just plain hard to get dinner on the table when there’s so much going on.

I began adapting my cooking to fit my new reality. As I did so, what I missed most were the soups that used to simmer on my stove all day. I really missed them, so I started to think about adapting them to make them quicker. Then it happened. I came up with a bunch of ways to make quick and easy soup recipes.

For my blog, I decided to challenge myself and make sure that all the soups are ready, from start to finish, in under 15 minutes. The SOUPin15 series was born.

Over the past 6 months, every single week I’ve shared a homemade soup that’s ready in under 15 minutes and I’m going to keep going for another 6 months. With each soup I also share a little secret tip. This tip is the key to making the soup delicious so quickly.

Here are 6 of my favorite SOUPin15 easy soup recipes.

I hope you enjoy cooking them, and that your whole family enjoys the soothing soup magic they bring to your table.

Thin, quick-cooking noodles and a special flavorful ingredient make this soup taste like my Baba’s in a fraction of the time.

Broccoli Cheese Soup in 15 Minutes

Frozen broccoli is the key to making this soup really quick, but it’s the extra-fast croutons that give it the bread-bowl-feel of Panera’s favorite soup.

Pumpkin Soup with Bacon and Parmesan Crumbles in 15 Minutes
This isn’t a sweet cinnamon-flavored pumpkin soup. This one is all savory. If you’ve never tried savory flavors with pumpkin, you’re going to love it. And heck, it has bacon!
