Roasted Corn Tomato and Avocado Salad

It’s Labor Day, and no picnic would be complete without this grilled corn, tomato, and avocado salad!

One of the last rites of summer… An opportunity to relax, spend time with family or friends, and basically, an open invitation to pig out on a harvest of all the good foods of the earth, like ____________ *insert your favorite summer food here*  Yes.  Bacon IS an acceptable answer.

One of my favorite summer foods is fresh corn.  Here in Wisconsin, corn is one of those crops that you see growing EVERYWHERE, but it’s not all for human consumption.  I’ve been tempted on more than one occasion, when driving on a back road in the middle of nowhere, to pull off to the side of the road and “borrow” an ear or two from a farmer’s field.  Tempting… but momma and daddy taught me not to steal, and they also taught me that 90% of the corn I see growing around here is FEED corn for the farm animals.  That’s not exactly the crisp, sweet bite that I was hoping for. I’ll just continue to buy my corn from the local farmer’s market.

This wonderful  roasted corn tomato and avocado salad calls for plenty of grilled corn.  Smokey, tender, and ohhh so good corn.

Incidentally, did you know that corn is packed with health benefits?  Despite the lack of green, it really IS a healthy veggie.  Here are just one reason to enjoy those tasty niblets:


  • Corn is a great source of fiber

One cup of corn provides 18.4% of the daily recommend intake of fiber.  Fiber has been shown to help lower cholesterol levels and to help reduce the risk of colon cancer. Fiber is also useful in helping to lower blood sugar levels in diabetics.  Besides that, fiber keeps the digestive system regular, and well… we all know what that means  🙂

Roasted Corn Tomato and Avocado Salad

Freshly roasted corn is tossed with tomatoes, peppers, avocado, and a light and tangy citrus dressing to create a side dish that you'll want to have at every outdoor party this summer!

  • 6 ears fresh sweet corn husks and silks removed
  • 2 tablespoons avocado oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups halved yellow and red cherry tomatoes
  • 1 small red bell pepper finely chopped
  • 4 scallions finely chopped
  • 2 avocados diced
  • 2 cups baby spinach

Citrus Dressing

  • 2 Tablespoons lemon juice (approximately 1/2 lemon)
  • 2 Tablespoons lime juice (approximately 1 lime)
  • 1/4 cup avocado oil or olive oil
  • 1.5 teaspoons paprika
  • 1 teaspoon cane sugar or honey
  • 1/8 teaspoon onion powder
  • Salt and black pepper to taste


  • Preheat grill or broiler to medium heat.
  • Rub corn with 2 tablespoons of oil and season with salt and pepper. Grill or broil corn for 7 minutes or until ears are lightly browned. Remove from grill and allow to cool.
  • Remove the kernels form the cob and place in a large mixing bowl along with the cherry tomatoes, red bell pepper, scallions, and baby spinach
  • In a small bowl, prepare dressing by whisking together the lemon and lime juice, olive oil, paprika, onion powder, sugar, salt and pepper.
  • Toss the salad with the dressing and serve at room temperature.

  1. Well, I dare say that I do love the recipe, but when it comes down to it, if I have grilled corn in front of me, it’s not going to be around long enough to get put into a salad. 🙂

    Corn was a Summer fav of mine until I heard about Monsanto & GMO’s….yet another thing people never had to worry about back in the day!
