2apples (your favorite variety - I used Envy apples)
1tablespoonground cinnamon
Instructions
Set oven to 200 degrees F
Line a stoneware or similar rimmed, heavy bottomed sheet pan with parchment paper
Use the smallest setting on a mandoline or a knife to very carefully cut paper thin slices of apple (about 1/16th of an inch). Remove and discard any seeds from the center of each slice, then arrange slices in a single layer onto the prepared baking sheet. Sprinkle slices liberally with the cinnamon.
Bake for 90 minutes, then flip each slice and bake for another 60-90 minutes, or until the chips are crispy and no longer soft.
If placed into an airtight container, the chips will stay good for 4-5 days, but I doubt that they'll last that long!
