In small bowl or measuring cup, use whisk to combine mayo, balsamic vinegar, sweetener or sugar, lemon juice, and garlic. If desired, partially peel the cucumbers, leaving strips of peel. (I left the peels on).
Slice cucumbers in half from top to bottom, then hold the two pieces together and cut horizontally into 1/8-inch slices.
Place the cucumbers and onions into a serving bowl. Toss with dressing, season to taste with salt and pepper, and serve immediately or chill for 1-2 hours before serving to allow the flavors to come together.
