These ground chicken burgers are stuffed with little bits of jalapeno and spicy pepperjack cheese, then topped with grilled bell peppers, onion, and your favorite fajita toppings. It's time to #SayCheeseburger!
1jalapenoseeds removed and very finely diced ** (See notes)
4ouncesshredded pepperjack cheese
1Tablespoongrapeseed or olive oil
1red bell peppercored, seeds removed, and sliced into thin strips
1green bell peppercored, seeds removed, and sliced into thin strips
1large yellow or white onionpeeled and cut into thin slices
4hamburger buns or rolls
Instructions
In a medium bowl, use your hands to combine ground chicken, salt, and jalapeno. Form 8 equal sized patties, each weighing 2 ounces (roughly 1/4 cup each). Place shredded cheese on top of one patty and top it with another patty. Use your fingers to seal the edges of the patties together.
Place burgers at least 1 inch apart onto the preheated grate of a hot grill, or into a grill pan that's been preheated over high heat for at least 3 minutes.
If you're using a grill pan, immediately reduce heat to medium-high. Cook burgers on one side for 4 minutes, then flip and cook on other side for an additional 4-6 minutes, or until internal temperature reaches 163 degrees F. Transfer burgers to a platter and allow them to rest for 5 minutes before serving.
While burgers rest, heat 1 tablespoon oil over medium high heat in a large saute pan (or wipe your grill pan with paper toweling and use that pan), and saute peppers and onion for 5 minutes, stirring occasionally, until peppers are softened and onions are translucent.
Serve chicken fajita cheeseburgers on buns, topped with peppers, onions, and your favorite fajita fixings. Recommended: sour cream, salsa, and shredded lettuce.
Notes
** Use extreme caution when handling jalapenos. The juice can and will burn your eyes if contact is made. It's recommend to use food safe gloves.
