Traditional sloppy Joes take a walk on the wild side when they're made with a spicy peanut sauce and topped with a crunchy Asian flavored cabbage slaw.
4ounces(1/2 cup) tomato sauce or fresh Roma tomatoeschopped
Juice of 1 lime (about 1 Tablespoon)
1teaspoonsea salt
½teaspoonblack pepper
4whole grain buns of your choice
Instructions
Asian Cabbage Slaw
Combine cabbage and carrots in a large bowl.
In a small bowl, whisk together rice vinegar, soy sauce, lime juice and grapeseed oil. Just before serving, pour the vinaigrette over the cabbage mixture and toss lightly. If refrigerated, it will keep in an airtight container for 2 days.
Sloppy Joes
Heat grapeseed oil in a large, heavy frying pan over medium-high heat. Add onions, garlic, ginger, celery and hot sauce; Sauté, stirring often, until onions are translucent, about 5 minutes. Add ground turkey and use a wooden spoon to break meat into small pieces. Cook, stirring frequently, until meat is no longer pink, 6-8 minutes.
Pour off and discard any fat from the meat. Add ketchup, hoisin sauce, tomato sauce and lime juice, then season with salt and pepper. Reduce the heat to medium-low and simmer for 20-25 minutes, stirring occasionally.
Serve on buns, topped with Asian slaw
Refrigerate leftover meat and slaw in separate, airtight containers for up to 2 days.
