Using a knife or pizza cutter, cut the sheet in half horizontally, then cut each half into 4 equal sized pieces.
Using your fingers, press one crescent roll square into the bottom and up the sides of each of the 8 muffin tins. Leave a flap of dough available, which you'll use as a top crust after you've filled the muffin tins.
Place 2 Tablespoons (1 ounce) of diced ham into each of the 8 tins. Add 1 Tablespoon pineapple tidbits on top of the ham.
Sprinkle a dash of nutmeg over the pineapple and ham mixture, then top with 1 oz cream cheese.
Cover all of the ingredients with the excess flap of crescent roll dough and press the edges of the top layer with the edges of the bottom layer.
Bake 12 to 18 minutes or until golden brown. Remove pan from oven and serve the pineapple ham bites warm with a side of BBQ or marinara sauce for dipping.
