This easy hashbrown casserole recipe comes together quickly with help from frozen hashbrown potatoes and broccoli, plus cooked ham. Perfect for brunch or dinner!
14ouncescondensed cream of potato soup (low sodium if you can find it)
1cupplain Greek yogurtor sour cream
8ouncesshredded sharp cheddar cheese
¾cupfreshly grated Parmesan cheese(grate your own for best flavor)
¼teaspoongarlic powder
¼teaspoononion powder
½teaspoonblack pepper
¼teaspoonsaltoptional, as condensed soups are usually very salty
Instructions
Heat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish with olive oil or cooking spray.
In a large bowl, mix potatoes, ham, broccoli, cream of potato soup, yogurt, and cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
Bake 40-45 minutes, or until bubbly and lightly brown.
